My Second Cyser

Ingredients:

1 Gal Ryan's Apple Cider, (Hood River Juice Co., Hood River, Oregon)
~6 lbs Texas Wildflower Honey
2 sticks of cinnamon
1 small pinch cloves
very small amount of fresh ground black pepper
2 handful raisons
Water to 3 1/2 gallon.
White Labs Sweet Mead Yeast

Nov 25, 2004 1.090 I started a new batch of cyser today. I basically made this up off the top of my head. I wanted this batch to ferment reasonably dry, so I only mixed for a PA of 12%. I'm not sure where this will end up since I used the sweet mead yeast, but this yeast, in a peach melomel, has went clear dry, so it might go dry here. When finished, I plan to stabilize and sweeten to taste. I may even decide to do 2 versions. A real sweet version for the GF and a less sweet version for me. I'm thinking about 1.015 to 1.020 for me... 1.030 for the GF (she likes it real sweet!)

Note: I didn't measure out the honey to know exactly what was used. I added honey and water to get to a volume of 3 1/2 gallon at 12% potential alcohol. I started with a 12 lb bucket of honey, it it's about 1/2 empty, so I'm calling it 6 lbs!
Nov 27, 2004 This yeast definitely got off to a slow start. I'm guessing the yeast was past it's intended shelf life, which is 4 months form the bottle date (which is NOT shown on the bottle). It did finally get started and smells normal, so I think everything will be ok.
Dec 2, 2004 Still bubbling away.
Dec 19, 2004 0.99 Racked over to a carboy today. The SG was setting at 0.99, so I added about 1 cup of honey. I didn't check the new SG.
Jan 9, 2005 It's real slow, but it's still bubbling. I'll probably test the SG next weekend and see if it needs to be sweetened again.
Feb 26, 2005 1.00 It appears that all bubbling has ceased. A sample tested at 1.00 SG and the taste was rather pleasant. I intend to let this set another week or 2 just to make sure it's finished, then I'll rack, add some sulfate and sorbate, sweeten to taste, and then after another week or 2, bottle.
Mar, 5, 2005 Racked and Added the sorbate and sulfate.
Jun, 15, 2005 Bottled!
