Well, I recently bottled my Blackberry / Peach Melomel (1 gal) and it’s absolutely fantastic! It’s like drinking liquid hard candy! The dilemma is that I have 3 more gallons of peach melomel (still in the carboy) that is far less than spectacular. Of course, it’s possible that as the peach ages, it will improve. But, I’m fairly certain that I can add some blackberry juice to the peach and convert it to a wonderful Blackberry Peach melomel.
What I’m probably going to do is bottle half of the peach in the hopes that sometime in the future it will age into a respectable melomel. The remaining 1 ½ gallons will get mixed with some blackberry juice and hopefully, recreate the existing Blackberry / Peach melomel.
